Lemon Chicken Garlic Pasta

Oh, hey there.

Long time no talk!

I have been pretty busy this past week and my life is NOT slowing down any time soon. 

Kelly (my roommate) and I had a little date night last night and made a SUPER yummy light pasta that I got HERE so I figured I would share the recipe with yalls. It is such an easy recipe and can be measured completely to taste. For instance, the recipe calls for a half a lemon, but I LOVE lemon so I put a whole one in. Really play around with it. Maybe add a vegetable or something in there next time (Ooooo asparagus would be SO tasty in this pasta!)

INGREDIENTS
4 oz dry spaghetti (we used fettuccine, but any stringy pasta would work)
1/4 cup grated Parmesan
2 tsp olive oil
1 clove garlic
1/2 lemon
5-6 basil leaves, chiffonaded
Chicken (You can make chicken breasts and put it in, but I just bought one of those pre-cooked chickens from VONS. They are pretty tasty!)

DIRECTIONS:
1. Boil the water
2. As the water is boiling, cook the garlic in the olive oil until the edges are slightly browned then immediately remove from the heat and stir in the chicken
3. As the pasta is cooking, cut up your basil and if you are making garlic bread... be sure to prep that now!
4. Once the pasta is done, drain it and add it to the pan with the garlic.
5. Squeeze on that lemon, add the Parmesan, stir, and top with basil
6. Enjoy it because it is sooooooo good and you won't be able to stop!
Best smell on the planet right here.
I could eat garlic bread every day for the rest of my life.
How easy is this! Just throw it all into one pan and....
VOILA! So stinkin' yummy. I want some more right now.
I can't wait for my wonderful family to come into town this weekend!!! Hopefully I will have some great pictures of the show and of my family time!

Oh, also, this is my little sister Tori (she is taken and way too young for any of you). She is currently in "The Music Man" but due to distance and timing I cannot make it down to see my sweet sister tear up that stage.

Here Comes the Sun.

ESTHER!!! Gosh I love this girl. Although our time was short together yesterday, we made the most of it. I love spontaneity and that's exactly where this little sunny photo shoot came from! So much fun!

This is the start of a busy two weeks! I will be trying to update as much as I can, but Spring Sing is in 10 DAYS!!!

I think I have breifly mentioned Spring Sing before, but it is a dorm competition where the dorms split up into men and women and they make up an eight-minute skit. They change the lyrics to popular songs and have costumes and giant props... the works. We perform at a huge venue called the Santa Barbara Bowl so its SUPER fun! And I feel like I am a diva like Beyonce. It's fantastic. THIS is the skit my lovely Co-Director, Briana, and I directed last year. Briana, baby you're a firework.

Anyways, last year I was a dorm director, but this year I am the Co-Producer which means I am second in command this year and I will be producing the ENTIRE (aka I am in charge of all the dorms and behind the scenes work) show next year! So it will a TON of work, but it's a blast! I am extremely honored to be in this position!

Also, continue to pray for Profe Miles. Her surgery went well, but continual prayer for a speedy recovery is great!

Mundane Mondays

First day back at school in a week and I am going to be honest with you... I would rather be ANYWHERE else right now. I mean, I love Westmont and I love the people here, but the second I stepped into my first class today I felt that same loathing for early mornings and lecturing professors. 

On a lighter note, I bought some really awesome chapstick and it came in the mail today. The scent is "Unicorn Farts" as displayed below. I got it off of Long Winter Soap Company off of Etsy.com. It really does smell like what a unicorn's farts would smell like and it keeps my lips SUPER DUPER hydrated. 
Also, my mom, little sister, and I have become quite obsessed with the game "draw something" so here are a few of my creations... 

If you play me I may just display your most beautiful pieces :)

My most incredible spanish teacher from high school is having breast cancer surgery tomorrow and I know she would love LOTS of prayer tomorrow! Read about her story here.

Skittles vs. M&M's Roulette

The Chubbmiester has left the building. Aka, my swelling has gone down.

At my follow-up appointment today the oral surgen told me I could eat real food! So my mama and I immediately went to DZ Akin's (a family favorite) and got some yummy french toast with Grammy and Papa. Great start to a great day that ended with some DELICIOUS Italian food at Arrivederci's (THANK GOODNESS!!! I missed my pasta) and a family outing to the movies. 

The movie, a documentary about a coach of a football team in a very underprivileged area in Memphis, TN that completely turned their football program, was called "Undefeated" and there is just one thing I don't understand; how come, every time a movie is ENTIRELY about football I end up in tears. EVERY TIME. Honestly, it was really good, but I am really tired and was totally dozing off durning parts of it, but every time I wasn't, I was crying. I just don't get it. haha
Double take much??? Seriously, they are twins.

Oh and no movie theater candy for us. We took a trip down memory lane and got candy from Candy Depot (went their in 5th grade with my best friend Molly right after we went to Corvette Diner with our class). I was SO excited to be there because I LOVE candy, but I came across the same thing I do every time I go to a pay-by-weight candy shop; The Chocolate vs. Fruity/Sour Dilemma. I mean I have to be honest with myself, I have no control when I enter a 100 foot radius of candy, let alone an entire store FULL of all the options at my fingertips. So of course, my infantile mind chose both. Bad choice. I spent the whole movie playing Skittles vs m&ms roulette.
My Dad's bag has 1 jawbreaker in it. Seriously, that was all he got.
